Cheater Chicken Chili

Wow – it’s been a long time since our last post! We’ve been a bit sidetracked with Covid, family matters, and getting repairs and painting done on the rest of the property.

With being on the go so much, easy-peasy recipes have been very handy. Here’s a chili recipe I made up one day with items we had on-hand in the fridge and pantry.

Takes less than an hour, and it’s very filling. Enjoy!

Cheater Chicken Chili

Ingredients

  • 2-3 cans 12.5 oz. chicken breast, drained
  • 3 cans 10 oz. Rotel diced tomatoes with green chilies
  • 1 can 6 oz. tomato paste
  • 2 cans 15.5 oz. black beans
  • 1 Tbsp. minced garlic (I keep a jar in the fridge at all times)
  • 1 Tbsp. chili powder
  • 2 tsp. diced chipotles in adobo sauce

Instructions

  • Open the cans, drain the chicken, and dump everything in. I don't bother draining the beans. We use three cans of chicken because my family likes it meaty, but you can definitely get by with only two. Add garlic, chili powder and chipotles in adobo and stir. Bring to bubbly and then let simmer for about 30 minutes. We serve over rice, or top with cheese and crunched-up tortilla chips. Yum!
