3cans10 oz. Rotel diced tomatoes with green chilies
1can6 oz. tomato paste
2 cans15.5 oz. black beans
1Tbsp.minced garlic (I keep a jar in the fridge at all times)
2 tsp.diced chipotles in adobo sauce
Open the cans, drain the chicken, and dump everything in. I don't bother draining the beans. We use three cans of chicken because my family likes it meaty, but you can definitely get by with only two. Add garlic, chili powder and chipotles in adobo and stir. Bring to bubbly and then let simmer for about 30 minutes. We serve over rice, or top with cheese and crunched-up tortilla chips. Yum!
